FDA WARNING_LETTER - Resers Fine Foods Inc - October 29, 2013
The FDA conducted an inspection at Reser's Fine Foods, Inc.'s ready-to-eat salad manufacturing facility in Topeka, Kansas, from October 8-29, 2013. Environmental samples tested positive for *Listeria monocytogenes* (L. monocytogenes) in the "Mayo Room" from a metal water line dripping into a mayonnaise mixing vat and from the vat's control touch screen. This, along with observed Current Good Manufacturing Practice (CGMP) violations, renders their products adulterated under Section 402(a)(4) of the Federal Food, Drug, and Cosmetic Act.
Violations included: 1. Failure to adequately clean and sanitize food-contact surfaces, specifically filling lines, as detergent was not used prior to sanitization as per sanitizer instructions. 2. Plant construction deficiencies leading to condensation and drips contaminating food and food-contact surfaces in the Potato Cook Room, Kettle Cook Room, Work in Process Cooler, and mixing room. 3. Improper storage of cleaned and sanitized portable equipment, leading to potential contamination. 4. Plant construction issues with floors, including an old, cracked pit scale that released water when stepped on. 5. Inadequate plumbing leading to standing water on floors in the Curwood Bake Room and Work in Process Cooler, with food pallets observed in puddles. 6.
